You’re spot on except for one thing.

In the traditional slaughter of animals for the kosher trade the knife must be both long, typically around 60cms., and razor sharp and free from any defect or the meat will be “treif” and unusable, moreover the animal must be slaughtered with a single cut.

For slaughter for halal there are no requirements about the state of the blade, and no restriction on the cutting which is mostly done with a series of slashes and even stabs.

From the sources I have looked up on about halal the requirements are much the same as the ones you give for Kosher slaughter. I'm not sure they are correct but they certainly talked about the blade being very, very sharp and having no defects or kinks.

One long cut in the neck was also talked about, in fact it was said if the blade caught even a little the meat was not halal.

He’s right (as long as you keep your fingers out of the way! )

A razor sharp blade across the wet throat of an animal will be painless (as razor cuts are) and the devastating blood pressure drop as a result of severed arteries will send the animal into deep unconsciousness before any pain kicks in until death follows exsanguation.

It should be noted at least some Muslims have no problems with stunning or using anesthesia on the animals.

Actually sharp blades like that don't cause much immediate pain particularly when the animal almost instantly goes into shock due to massive blood loss. I'd be suprised if there was pain, particularly any more than would be experienced if it was stunned. It is not stupidity but a knowledge of biology.
